Restaurant Petrus presents five wine dinners celebrating rare vintages and innovation

Now in its sixth year, the Island Shangri-La Festival of Wine returns with its most ambitious collection yet, a meticulously curated selection representing the pinnacle of winemaking, from Burgundy’s most coveted estates to Napa’s cult classics.

At Restaurant Petrus, chef Uwe Opocensky has crafted bespoke menus to accompany each wine selection. His approach, rooted in the interplay of texture and flavour—soft to crisp, smoky to delicate—ensures every course resonates with its pairing.

Pommery Champagne dinner on November 4, 2025

Since 1858, Pommery has been at the forefront of Champagne innovation, introducing the revolutionary Brut style that redefined modern elegance. This evening celebrates the house’s classic heritage and contemporary flair through six exceptional cuvées.

Chef Uwe’s interpretations of French seafood classics take centre stage: Dover sole, seabass and Brittany mussels in a delicate cream sauce find their perfect counterpart in the Y by Yoshiki Brut, while lobster and langoustine ravioli dances effortlessly with the Grand Cru Millésime 2008. The evening culminates in veal cheeks with mushrooms in Bordelaise sauce, a rich match for the depth and grace of Louise Brut Rosé 2004.

Domaine Leroy wine Dinner on November 6, 2025 (limited to eight guests)

An intimate experience tailored for serious collectors and connoisseurs, this dinner showcases some of Burgundy’s rarest and most coveted vintages from Lalou Bize-Leroy’s legendary estate.

The menu celebrates the season with French autumn ingredients designed to complement the wines’ remarkable structure. Lobster and scallop with a hint of vanilla pair elegantly with Corton-Charlemagne Grand Cru 2001, while braised beef cheeks reveal new dimensions alongside Gevrey-Chambertin 1er Cru Combettes 2013.

Guided by the restaurant’s sommelier, guests will experience Clos de la Roche 2006, Romanée-Saint-Vivant 1998, and Clos Vougeot 1998, a rare journey through the artistry and legacy of Burgundy’s finest terroirs.

Château Duhart-Milon wine dinner on November 13, 2025

Celebrate the legacy of Château Duhart-Milon, a distinguished Fourth Growth Pauillac estate transformed under Rothschild ownership since 1962 into one of the Left Bank’s most respected properties.

Chef Uwe Opocensky’s creativity brings out the nuance of each selected vintage. The rare Le Blanc de Duhart-Milon 2023, a 100% Sauvignon Blanc, dances with Japanese oysters, one bright with citrus, another perfumed with herbal gin and tonic cucumber. Pigeon Hugenin with cabbage and chocolate finds a surprising match in the 2011 and 2010 vintages, while charcoal-grilled wagyu lasagna skewers bring out the subtle elegance of the 2007.

A family member of Château Duhart-Milon will personally present the wines, including the newly released Le Blanc 2023 and the highly sought-after 2010 vintage.

Prieuré Roch wine dinner on November 18, 2025

The artistry of Domaine Prieuré Roch takes centre stage in this dinner led by winemaker and co-director Yannick Champ, who showcases a bold, terroir-driven expression of Burgundy through minimal intervention and purity of craft.

Chef Uwe Opocensky crafts an earthy, umami-driven menu to complement these natural, unfiltered wines. A cep mushroom tart pairs with Nuits-Saint-Georges 1er Cru VV Magnum 2022, while French duck in crêpe with autumn vegetables meets the Clos des Corvées Monopole 2021. The evening culminates in a showstopping tarte tatin with confit Rhug venison and parsnip, bringing out the depth and complexity of Chambertin-Clos de Bèze Grand Cru 2022.

Harlan Estate wine dinner on November 25, 2025

A celebration of one of Napa Valley’s most revered estates, this dinner honours Harlan Estate’s pursuit of excellence, a producer whose vintages rival Bordeaux’s First Growths in rarity and acclaim. All wines served during the evening have achieved 100-point scores from Robert Parker.

Chef Uwe Opocensky embraces the boldness of these New World wines through family-style service and richly structured dishes. Pork head terrine with mustard dressing, garden leaf salad with ham and pickles, and rösti beef tartare open the evening alongside the 2017 Harlan Estate. Homemade veal sausages with cabbage and red wine jus perfectly complement the 2016, while whole grilled, smoked, and steamed turbot takes centre stage with the legendary 2004 vintage.

The Asia Pacific Co-Director of Harlan Estate will lead guests through the wines, sharing insight into the craftsmanship behind the estate’s enduring reputation.
