Amber’s expression of French finesse
Tatler Best Asia-Pacific 100 restaurant Amber, also distinguished with three Michelin stars and a Michelin Green Star, presents festive menus that reflect chef Richard Ekkebus’s ingredient-driven philosophy. This season’s dishes highlight Murasaki uni, kabocha and white Alba truffle, expressed in creations such as a delicate buckwheat tart layered with earthy, sweet and umami notes.
Other standouts include line-caught kinki with salt-tomato, carabinero, yuzu kosho, kinome and Per me Figlio Manni olive oil, a dish that distils the purity of pristine seafood. The pigeon “au Sang” with bitter chocolate sauce, cacao mucilage, Tasmanian cherry, cubeb pepper and heirloom carrot shows Ekkebus’s deft balance of richness and freshness, while blue lobster with puntalette, lacto-fermented hazelnut butter, hedgehog mushroom, white Alba truffle and yellow wine is an unmissable celebration of the season.
