An evening with Château Batailley at Summer Palace
As part of Island Shangri-La’s sixth annual Festival of Wine, Summer Palace will host a special Château Batailley Wine Dinner on November 19, 2025. The Fifth Growth Pauillac estate is celebrated for offering exceptional quality within its classification, wines that balance youthful energy with the grace of maturity.
Summer Palace’s refined Cantonese cuisine finds a surprising harmony with the structure and depth of Pauillac wines. The baked stuffed crab shell with truffle pesto is paired with the 2016 Château Batailley, its richness and minerality echoing the dish’s umami depth. The sautéed razor clams with basil and bell pepper in black bean sauce complement the same vintage’s precision and spice, while the 1985 Château Batailley, with its supple tannins and layered complexity, is paired beautifully with stewed Wagyu beef cheek in the chef’s preserved bean paste.
Philippe Castéja, CEO and winemaker of Château Batailley, will personally present the evening’s wines, guiding guests through this exceptional tasting at Summer Palace.
