Explore a new collaboration with chef Chan Hon-cheong from One Harbour Road

Executive Chinese chef Chan Hon-cheong of One Harbour Road, a Macau native, partners with Long Tin, a heritage cured meat brand from Macau’s Red Market with more than half a century of history. Together, they present a seasonal tasting menu that reinterprets traditional preserved sausages through refined technique and contemporary flair.

A highlight is the wok-fried assorted preserved meats with leaf mustard and champignon mushrooms, featuring premium Taiwanese champignons. The dish layers the textures and aromas of preserved sausage, duck liver sausage and preserved pork belly into a balanced and aromatic composition.

Other standouts include the baked bird’s nest and preserved pork sausage egg tart, and a crispy pastry with 30-year-aged sun-dried tangerine peel, preserved duck liver sausage, fermented beancurd and lotus paste. Each creation at One Harbour Road reflects Chan’s inventive approach, blending traditional heritage ingredients with delicate craftsmanship to create a uniquely Macau-inspired experience.

The collaboration also debuts two exclusive preserved sausages, created especially for this menu. After sampling these specialities at One Harbour Road, guests can take the experience home with limited-edition gift packs available for purchase.

The collaboration menu is available at One Harbour Road from October 16 to December 15, 2025.
