Hennessy meets Above & Beyond in a Seafood Symphony
Celebrated for its sweeping harbour views and once again recognised in the Michelin Guide 2025, Above & Beyond unveils an extraordinary seasonal collaboration this autumn. From September 1 to November 30, 2025, guests are invited to indulge in an exclusive eight-course Hennessy Cognac × Above & Beyond seafood set menu, complemented by three à la carte creations infused with the timeless elegance of cognac.
This seasonal offering marries the heritage of Cantonese gastronomy with the refined character of Hennessy. Premium seafood is elevated by aromatic layers of vanilla, oak and delicate fruit, creating a dialogue of depth, complexity and sophistication. Each dish strikes a careful balance of tradition and innovation, best savoured against the glittering panorama of Victoria Harbour.
Among the highlights is a luxurious braised conpoy and crab meat soup, enriched with sweet, succulent crab and premium dried scallops, finished tableside with a delicate drop of Hennessy V.S.O.P for a lingering refinement. The wok-fried lobster, sourced locally, is gently poached in oil at a low temperature to preserve its succulence before a touch of cognac is added at the table, imparting delicate floral and candied fruit notes that harmonise with the lobster’s natural sweetness. The deep-fried blue cod, meanwhile, showcases a refined technique that crisps the skin into golden flakes, served with a rich lobster sauce delicately lifted by Hennessy. Further creations extend the journey with pan-fried king scallop layered with black truffle and wild mushroom, Inaniwa udon with shrimp roe and hairy crab cream, and Above & Beyond’s signature Peking duck.

Guests may also explore a trio of exclusive à la carte dishes infused with Hennessy cognac, including baked Japanese oyster with spring onion, deep-fried blue cod finished with a touch of cognac, and wok-fried lobster elevated tableside with a delicate pour. The à la carte offerings begin at HK$268, while the eight-course seafood set dinner is priced at HK$1,088 per person, with a minimum of two guests. For those seeking a deeper immersion, a curated pairing of three Hennessy cognacs — the full-bodied V.S.O.P, the floral and candied James Hennessy, and the rich, complex X.O, is available at an additional HK$480 per person, thoughtfully selected by the restaurant’s sommelier to complement the menu’s nuances.
