Pre-departure dining at Plaza Premium Lounges takes travellers around the world with a new chef series
Plaza Premium Lounges has unveiled its latest campaign, “Your destination before departure”, introducing a distinctive chef series across 20 major airport lounges globally. This initiative immerses travellers in the cultural essence of each location through authentic local cuisine, art and hospitality. The culinary focus lies in the “Flavours in transit: From our roots to your plate” series, with over 200 chefs showcasing heritage recipes that connect flavour with place. The campaign launches in key hubs, including Hong Kong, Singapore, Dubai and Rome, until October 6, 2025.

Highlighting local culinary traditions at pre-departure
The campaign’s premise is to engage all five senses, offering guests a sensory journey that extends beyond typical airport dining. Lounges will feature signature dishes crafted by local chefs who draw on family recipes and regional ingredients to narrate the story behind every dish. These dishes aim to convey authenticity without adapting to conventional airport fare, representing Plaza Premium Lounges’s commitment to local culinary traditions.
Standout highlights include Ricky Tam’s Fish Ball Noodle Soup in Hong Kong, perfected through rigorous trial to embody the city’s iconic street food culture. Macau’s Macanese Style Portuguese Chicken by chef Simon Chong heralds its East-West heritage with aromatic spices in a creamy coconut sauce, while Singapore offers the bold and spicy Prawn Laksa Noodle, a local favourite by chef Chan Seong June. The series also features Malaysian Chicken Satay by chef Haward Lee, Sydney’s Braised Beef Ragu Pappardelle by chef Sanju Khadgi, Sicilian Gnocchi alla Norma in Rome and a rich Butter Chicken Bowl in Dubai, reimagined for the airport setting.
Beyond the dishes, Plaza Premium Lounges integrate curated wines and art from local artisans to enhance each lounge’s “proudly local” ethos, blending tradition with contemporary hospitality.
Guests at participating lounges can sample bite-sized tastings and access recipe booklets by engaging through Plaza Premium Lounges’s social media channels, allowing the campaign experience to extend beyond the terminal.
This new campaign reframes lounges as mini gateways rather than mere waiting areas. Through purposeful collaborations and a focus on locality, Plaza Premium Lounges aim to transform pre-flight moments into meaningful culinary journeys, making the airport experience richer and more connected to each traveller’s destination.
