Pegasus Bay wines meet Fujian flavours at Ming Pavilion

As part of Island Shangri-La’s Festival of Wine, Ming Pavilion presents a special evening celebrating the harmony between Fujian cuisine and the expressive wines of Pegasus Bay from New Zealand’s Waipara Valley.

Guests will enjoy an elegant progression of pairings, beginning with the crisp 2024 Pegasus Bay Riesling, matched with scarlet prawn terrine, Japanese squid, and scorched green chilli sauce. The rich 2020 Pegasus Bay Chardonnay enhances steamed Hokkaido scallop with Fujian pickled vegetables and vermicelli, while the velvety 2015 Pegasus Bay Pinot Noir elevates tea-smoked Wagyu beef short rib. The refined 2022 Pegasus Bay Prima Donna completes the evening, harmonising beautifully with fried rice featuring Xia Pu seaweed and local lobster.

A cross-cultural dining experience where New Zealand’s terroir meets the elegance of Fujian cooking, crafted for those who appreciate nuance in both glass and plate.
