To Chef Lawrence, dessert is more than a treat — it’s a story. Originally from Malaysia, he brings with him decades of experience from top-tier hotels across Asia, along with a signature flair for balancing intricate techniques with bold creativity.
His exclusive Chocolate Afternoon Tea experience at InterContinental Bangkok begins with a medley of savoury bites — elegantly presented, thoughtfully balanced. Expect delicacies like devilled quail egg and caviar atop paprika melba toast, Parma ham paired with brie, and grilled chicken with avocado cream cheese. You’ll also enjoy a tomato, zucchini, and goat cheese tart, followed by a warmly spiced chorizo and onion quiche that melts in the mouth.
Then comes the sweet crescendo — a showcase of Chef Lawrence’s pastry mastery. Each creation is designed to delight, from the rich and tangy Chocolate Framboise Tart, to the smooth Hazelnut Royale, and the luxuriously layered Ruby Champagne Delight. The Blackberry Tea Cake, gently infused with Earl Grey, rounds out the experience with a delicate floral finish.
And for chocolate purists, the highlight is unmistakably the Salted Caramel au Lait & Earl Grey Coconut bonbon — a glossy, handcrafted bite that combines depth, silkiness, and just the right hint of surprise.
