Ingredients:
· 200g mung beans
· 20g slab sugar (palm sugar)
· 1 large piece dried seaweed
· 1 small piece dried tangerine peel
· Pinch of edible baking soda (optional)
· 2L water
Steps:
1. Soak mung beans, tangerine peel, and seaweed in water, then rinse.
2. Cut seaweed into strips. Scrape off white pith from tangerine peel.
3. Drain beans. Boil with minimal water until dry, then simmer covered for 20 mins until soft.
4. Add remaining water (and baking soda if using).
5. Add tangerine peel, simmer on medium-low heat until beans break down into smooth texture.
6. Add seaweed strips, cook 10 more mins.
7. Finally dissolve slab sugar to desired sweetness. Serve warm/chilled.
