Ingredients:
· 600g chicken mid-wings
· 2 tbsp preserved olive vegetable
· ½ box ready-to-drink lemon tea
· 1 tbsp red chili flakes
· 2 tsp minced garlic
· 1 tsp minced ginger
· 2 tbsp chopped scallions
· ½ cup clear chicken broth
· Cornstarch or sweet potato starch (as needed)
Marinade:
· 2 tsp light soy sauce
· 2 tsp egg white
· A dash of sesame oil
· A pinch of white pepper
· 2 tsp cornstarch
Steps:
1. Rinse and pat dry wings, mix with marinade. Refrigerate 2-3 hours (overnight for better flavor).
2. Dust with starch before cooking. Pan-fry in hot oil until golden and cooked through. Drain and cool.
3. Re-fry in hotter oil to crisp. Set aside.
4. Saute garlic and ginger, add lemon tea and broth. Bring to boil.
5. Stir in olive veg and chili. Reduce sauce by half.
6. Return wings, cover and simmer 2-3 mins. Reduce to semi-dry consistency. Garnish with scallions.
