Ingredients:
‧ Whole chicken 1 (fresh chilled)
‧ Premium first-press soy sauce 5 tbsp
‧ Dark soy sauce 5 tbsp
‧ Rice wine 5 tbsp
‧ Rock sugar 40g
‧ Water 500ml
‧ Ginger 1 large piece
‧ Spring onion 2 stalks
‧ Corn oil 2 tbsp
Preparation:
1. Peel and smash the ginger, then trim both ends of the spring onions.
2. Thoroughly rinse the chilled chicken and pat dry its exterior and cavity.
3. Lightly fry the ginger and spring onions in a wok until aromatic, then stuff them into the chicken cavity.
4. Place the chicken breast-side down in the wok to evenly sear until golden brown. Flip to sear the other side.
5. Return the aromatics to the wok. Add rice wine, premium first-press soy sauce, dark soy sauce, rock sugar, and 350ml water. Cover and braise for 5 minutes.
6. Remove the lid. Simmer on medium-low heat while continuously basting the chicken with sauce for 10 minutes. Turn off heat and let it steep covered for 15 minutes until just cooked through.
7. Let the chicken cool before chopping into serving pieces. Simmer the cavity ingredients in remaining sauce until reduced. Serve as glaze or dipping sauce.
