A Taste of Luxury: Blue Lobster and Black Truffle at Sabatini Ristorante Italiano
It’s the season for indulgence, and Sabatini Ristorante Italiano is marking the occasion with a luxurious new menu that brings together two of the world’s most coveted ingredients: Brittany blue lobster and black truffle. Available until August 10 at both The Royal Garden and IFC Mall locations, the seasonal selection celebrates the height of summer with refined Italian flair.
Black truffles, often referred to as “black diamonds”, are prized for their intoxicating aroma and earthy depth, with rarity that only adds to their allure. Found deep underground in precise conditions, these winter delicacies lend an unmistakable richness to each dish. They’re joined by blue lobster from Brittany, renowned not only for its striking cobalt shell but also for its sweet, delicate flesh and velvety texture.
At The Royal Garden, executive chef Claudio crafts a menu alongside chef Marco at IFC Mall, featuring antipasti, pasta and mains built around these exceptional ingredients. Highlights include housemade tagliolini with blue lobster, Datterini cherry tomatoes and a hint of fresh chilli—a bright, flavour-packed dish that plays up the natural sweetness of the lobster against the vibrancy of ripe tomatoes.

This summer, Sabatini Ristorante Italiano presents an indulgent seasonal menu that brings together land and sea in decadent harmony. Available at both The Royal Garden and IFC Mall, the offerings spotlight two of the most prized ingredients in the culinary world: blue lobster and winter black truffle.
Among the highlights is the M5 Wagyu sirloin with black truffle, a dish that unites the marbled richness of premium Australian Wagyu with the heady aroma of truffle. Expertly seared to accentuate its tenderness and depth, the sirloin delivers a deeply savoury experience, its natural umami lifted by the earthy intensity of shaved black truffle.
For something lighter but no less elegant, the blue lobster salad with peach, green asparagus and caviar offers a refreshing counterpoint. Sweet, succulent lobster is paired with juicy summer peaches and tender asparagus, with a delicate dressing that lets the seasonal ingredients shine.
To elevate the evening further, live music accompanies dinner service—Wednesday to Sunday at The Royal Garden (7.30pm to 10.30pm) and Tuesday to Saturday at IFC Mall (7pm to 9.45pm). Bookings are highly recommended.
