Angelini at Kowloon Shangri-La reimagines Italian dining with new à la carte menu
Angelini at Kowloon Shangri-La ushers in a new chapter under newly appointed chef de cuisine Sam Sin, inviting guests to explore the sun-soaked flavours of Southern Italy through a refined new menu. Long celebrated for its sweeping Victoria Harbour views and polished setting, the Italian restaurant now offers a refreshed à la carte selection alongside a four-course tasting menu (HK$598) that spotlights Sin’s deft touch with premium seasonal ingredients.
With more than two decades of experience in established kitchens and luxury hotels, Sin brings a thoughtful balance of tradition and creativity to the table. His culinary approach centres on purity, seasonality and craftsmanship, evident from the outset in starters like grilled octopus with Calabrian nduja and a delicate red prawn tartare from Sicily.

Sin also brings theatre to the table at Angelini, heightening the dining experience with interactive flourishes and signature dishes that echo the warmth of coastal Italy. His fusilli lunghi bucati, tossed tableside in a DOP cheese wheel and finished with generous black truffle shavings, is as much a performance as it is a showcase of rich, layered flavour.
Equally evocative is the whole wild New Zealand blue cod, gently steamed and presented with a pour of zesty lemon butter sauce, a nod to the simple elegance of seaside village fare. The seafood casserole, meanwhile, is a soulful celebration of the sea: lobster, prawns, clams, fish, and squid, slow-simmered in a heady marinara that distils the essence of the Mediterranean in every spoonful.
The finale comes in the form of house-made tiramisu or a bright, citrusy sabayon whipped tableside with Sicilian lemons, berries, and almond crisps, sweet proof of Sin’s commitment to craft.
