Sourced from the lush pastures of the southwestern French mountains and raised exclusively on a nutrient-rich milk diet, this prized delicacy is celebrated for its exceptional tenderness and subtle, creamy flavour.
Certified with the Indication Géographique Protégée (IGP) label, the lamb is guaranteed to originate from the Pyrenees and to be reared using time-honoured, sustainable farming methods. The result is a premium cut of meat with a delicate pale-pink hue and a flavour profile that speaks to both provenance and craftsmanship—a wonderful celebration of spring’s finest.

At the heart of this seasonal celebration is the roasted whole Pyrenees milk-fed lamb, renowned for its exceptional tenderness and delicate flavour. Served as the centrepiece of a four-course set menu, the experience begins with a timeless caesar salad, followed by a crystal-clear chicken consommé enriched with pan-fried foie gras. To finish, a poached pear belle Hélène with hazelnut dacquoise offers an elegant nod to tradition.
